BREADING CHICKEN WINGS


Ingredients Needed: 
  • Chicken Marinade
  • Marinated Chicken Wings
  • Potato Starch
Equipment Needed:
  • 6” Metal Half Pan
  • 4” Metal Half Pan
  • Strainer Basket
Directions:
  1. Fill the 6” Half pan with 1/5 full of potato starch
  2. Grab 2 handfuls of chicken wings and add them into the 6” Half Pan with potato starch
  3. Using your hands, mix the marinated wings around until all the chicken is evenly coated with Potato Starch
  4. While mixing the wings, press down firmly on the chicken wings to ensure the breading will stick
  5. Use the strainer to shake off the excess breading
  6. Place the breaded wings into the 4” Half Pans
  7. Repeat steps 4-8 until all the half pan 400’s is filled and can close without resistance
  8. When done, put all the 4” Metal Half Pans full of breaded chicken into refrigerator and let it sit for a minimum of 30 minutes
  9. Label, Date, and Store properly
